I am generally of the camp that sticking to a whole foods diet doesn’t mean lots of ‘paleo’ treats, crusts, breads etc.. I would even go so far as to say the word paleo doesn’t resonate well with me either. It’s just like a label to promise one thing but deliver another. Labels have always been tags that ‘other’ another and I just want to reject it. Little rebel that i am.
I love thinking of healthy eating as a diet focused on a wide variety of plant matter along with healthy fats and proteins. I believe Michael Pollan nailed it when he said, “Eat food. Mostly Plants. Not too much.” It’s that last bit that makes me shy away from simply replacing standard baked fare with it’s slightly healthier-ish cousin, the Paleo baked good. They leaving me wanting….more.
Though this morning I was home with the tribe for our second snow day (which made it’s appearance after a weekend sandwiched by two teacher workdays) we needed
gin and tonic muffins!
So labels, as is often the case, came in ever-so-handy. I googled. I found a couple of promising temptresses and combined the best of several. So without further adieu, I’d like to introduce to you the Most Perfect Paleo Blueberry and Banana Muffins. I am serious. There are no other muffins. Just be forewarned.
1 Cup Almond Flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp sea salt
3 eggs beaten
1 cup Almond Butter
1 mashed banana
⅓ cup honey
⅓ cup melted unrefined coconut oil
1 cup fresh blueberries
Mix together dry and wet, fold in blueberries. Place in lined muffin tin. Bake @ 350 for 15-18 min.
